250g pitted dates (soaked in hot water for 5–10 minutes if firm)
1 cup (120g) mixed nuts (almonds, cashews, walnuts, etc.)
3 tbsp cocoa powder
2 tbsp nut butter (optional — adds richness and helps bind, I used Almond Butter)
1 scoop protein powder (optional — or sub with 2 tbsp oats or ground flaxseed, I used Salted Caramel Protein Powder)
1 tsp maple syrup (optional — adds richness and helps bind)
Pinch of salt
Optional extras: vanilla extract, cinnamon, chia seeds, shredded coconut
🥣 Method:
If your dates are dry, soak them in hot water for 5–10 minutes, then drain.
Add the nuts to a food processor and pulse until roughly ground.
Add dates, cocoa powder, nut butter, protein powder (or alternative), salt, maple syrup and any extras.
Blend until the mixture sticks together when pressed. If too dry, add a tiny splash of water.
Scoop and roll into balls. Wet fingers slightly if mixture is too sticky.
Optional: Roll in shredded coconut, chopped nuts, freeze dried fruit or cocoa powder.
Chill for 15–30 minutes to firm up.
